“Connemara on a Plate” is a celebration of the amazing local food resources from both the land and the sea.Head chef Sinead Quinn has spent years building relationships with local and artisan food suppliers to ensure every dish has provenance and integrity. Put simply, it’s nice to know where your food comes from and support the local community at the same time.
Knowing that the fish is from clean, local waters and so never has to be frozen. Knowing that the meat comes from local farmers who care about their animals. Fed off the land that is blessed with a perfect climate for growing grass. Knowing that many of the local people make a living from producing exceptional food products for our benefit and that by supporting them we are helping to sustain the local food eceonomy.
